The Evening

An exceptional menu, paired with Trinitas wines.

Your evening begins in the Cave with a luxurious multi-course dinner featuring torched hamachi with Osetra caviar, cherrywood-smoked Hokkaido sea scallops, duck foie gras and squab pithivier, A5 Wagyu, and butter-poached Maine lobster.

End the meal with a tower of New Year’s sweets, created to bring the evening to a celebratory close.

Each course is carefully paired with Trinitas Cellars wines to complement the flavors, textures, and progression of the menu.

Your ticket includes general admission to Midnight at The Meritage Ballroom Party, giving you the opportunity to continue the evening with music, celebration, and a midnight toast.

$445 Per Person

Your ticket includes the multi-course dinner in the Trinitas Cellars Cave, paired Trinitas Cellars wines, the New Year’s sweets tower, and general admission to Midnight at The Meritage Ballroom Party.

The ticket price includes 8.75% sales tax and a 26% service charge. Of the service charge, 50% is distributed evenly among the service staff and 50% is allocated to hotel labor expenses.
